Eating Light During Summer Months Using Simple Recipes

I don’t know about you, but during the summer months I’m so busy running around in the heat my appetite kind of diminishes. Not a good thing for a skinny gal like me…However, I love to make delicious pasta meals and cut up fresh fruit for my kids. Check out this healthy but easy recipe I made last night!
To make my marinara sauce, I used 10 fresh tomatoes, basil, oregano, and Italian parsley, and fresh thinly sliced garlic all from our organic garden. First I added 2 tablespoons of virgin olive oil to the pot, threw in my garlic (about 7 cloves)& chopped onion. I let them cook a bit but not burn. Then I crushed the tomatoes with my hands, threw in the fresh herbs and let it cook up to a boil. Once it boiled I let it simmer for 1 hour. (I also like to throw in a handful of parmesan cheese for extra zest!
Once the sauce is ready, boil up your water for pasta. Make sure not to over cook your pasta. You can use any kind you like. I chose spaghetti…my fav…This pasta dish is so easy to make and very light. Add a side salad if you like. There are a few celebrities out there who have made my sauce before and are hooked…
btw…my husband ate every bit of my sauce…no left overs here:(
